When it comes to our craft, the casks we choose are vital – no wonder when you think of the important job they do over the years. Sherry casks are absolutely essential for the flavour and colour of Tamdhu. In fact, one of the most exciting times at the distillery is when a new batch of casks is delivered from Spain.
The container arrives on our Speyside site and we gingerly open the door (we have to be careful that none of our precious cargo falls on top of us). Instantly, we’re hit by the incredible aroma of sherry and the sight of our casks, waiting to be filled. Then it’s a case of all hands on deck to remove the casks and inspect each and every one for quality. Only the very best casks will ever hold our new-make spirit. Once filled, we inspect the casks regularly and sample over time to make sure things are progressing exactly as they should be. And then, we give the casks time to do what they need to do. It’s a long process, but if you’ve tried a dram of Tamdhu, we’re sure you’ll agree – it’s worth it.
